Happy Galentine's Day, y'all!

These red velvet cookie sandwiches and pudding parfaits are the perfect companion to any girls night. Or if you're celebrating virtually this year, these are perfect to make together over video call!

The Red Velvet cookie sandwiches were adapted slightly from this recipe for Red Velvet Whoopie Pies. The only thing I did differently was omit the vanilla. Also, you'll notice that my piped "hearts" didn't always turn out perfectly. The worst shaped ones became my pudding toppings!

As for the pudding parfaits? White Chocolate pudding mix, made according to the box. Added a sprinkle of cinnamon in to it. Then I broke up a few of my cookies and add them and chocolate chips to a glass, alternating between the toppings and the pudding!
